Course Description
Baking isn't hard, so why do so many people say they can cook but cannot bake? Aren't the processes the same? Beginning Baking is for the absolute beginner. Do you feel hopeless when it comes to baking chores? Can't make bread, pies, cookies? Beginning Baking is going to be a hands on course. I will walk you through recipes, and you will learn through trial and error, using the new material that was covered in each lesson. Ten lessons (listed below) make up the majority of this course, though some netlinks will also give additional tips and information. I will introduce you to how your oven works, stocking your kitchen, baking terminology and continue right through to making the final product. Each lesson will end with an assignment that utilizes your new skills as I walk you through a recipe that will have you baking in no time. Tests often utilize recipes and your newly learned baking skills. So having the necessary ingredients on hand will be a must. All students will receive by email a list of things that must be readily available. I have tried to keep this list to a minimum. If you feel this course would be a hardship due to finances, email me before enrolling. Some items can be substituted but some are essential. I can help you make that decision.
Course Requirements
Most material for this course is provided through the various links and lesson material. However, it is mandatory that you have a working oven in your home. You can't cook without one! There are also other items that must be readily available, I have tried to keep this list to a minimum, but if you feel you would face hardship having to buy new pans, contact me before enrolling. There may be substitutes I can suggest instead. You also need these necessary basic utensils and pans on hand: (I will go over what each item is used for and looks like in the first lesson. You will need: Mixing Bowls, an electric mixer, Rubber Spatulas, Metal spatula, Mixing Spoons of some type - tablespoons often work fine, Baking/Cookie Sheets, Cake Pans (at least two 9 inch pans, shape does not matter), Loaf pans, fork and knife or a pastry cutter, Dry and Wet Measuring Cups, Measuring spoons, Oven thermometer, and sifter. Then you'll need basic ingredients. Not all of these will be necessary at first, but they will be used at some point during the course. All-purpose flour, milk, water, sugar, salt, yeast, butter/margarine, butter flavored shortening, vegetable, canola or olive oil, eggs, baking soda, baking powder, vanilla.
Course Goals
Beginning Baking is a work at your own pace course. I know how busy most of us are. Work at your pace, but if you get stuck, ask for help. Experience is not necessary, and preferably all students will be absolute beginners. Through 10 lessons, you will become familiar with terms used in baking, the different manners of baking, how to read a recipe, stocking your kitchen and more. Understanding Your Oven

Course Materials
While no cookbooks are necessary, it is critical that you have an oven or at least have access to one. You must have the means to buy key ingredients such as flour, eggs, butter, sugar, margarine, milk, baking powder, baking soda, yeast, oil, vanilla, etc. An email listing all the necessary ingredients will be sent to all new students. You will most likely buy other ingredients for the "your choice" cooking assignments, but those will be up to you to decide if you want to use what's on hand or venture out to something with a variety of ingredients.
Grading Policy
I am not setting any deadlines, complete the lessons at your own pace, but if you need help. Do not hesitate to ask! The grading system follows a simple A through F scale, as described below.
A+ ~ 100% A ~ 99 - 95% A - ~ 94 - 90% B+ ~ 89% B ~ 88 - 85% B- ~ 84 - 80% C+ ~ 79% C ~ 78 - 75% C- ~ 74 - 70% D+ ~ 69% D ~ 68 - 65% D- ~ 64 - 60% F ~ 59% or lower
