Course Description

If you have ever been to an Indian Restaurant and wondered "Wish I could prepare these lip smacking Indian dishes at home", then you have come to the right place, because this course teaches you about Indian Vegetarian Cooking. This is completely a course on vegetarian dishes, no eggs or meat. You'll learn step-by-step to achieve the final goal. This course deals with scores of Rice Delicacies, Breakfast Specialities, Side Dishes, and Desserts. The recipes are explained in detail with pictures for easy understanding. Once you join this course and go through the recipes, your fingers will be itching to prepare and enjoy the mouth-watering dishes.

You don't have to be a professional chef to join this course. You just need to know your way around the kitchen. Best of all, there are no start or end dates to join and complete this course. You can complete the course at your comfort and convenience. Also, I'll be there to help you out every step of the way.

Course Requirements

Students should know their way around the kitchen. Students are expected to be aware of the basic kitchenware like blenders, choppers, knives, peelers etc. and handling them. Students also should know the basic food products like sugar, rice etc.

A must for this course are Electric Rice Cooker, Blender/Mixer and the basic kitchen utensils.

Regarding Indian groceries, there are two sites mentioned in the course material, where you can get them.

Once you have completed this course, you'll be able to cook Indian dishes with ease and serve your family and friends.

Course Materials

The Recipes have been explained in detail with pictures, which should be sufficient for good understanding. For further reading and learning, there are a few links mentioned in the Class Net Links section, where you can find books on Indian Cooking.

Grading Policy

This course will be graded on a percentage basis. Certificate of Academic Excellence will be awarded for scoring 70% or more. Certificate of Outstanding Achievement will be awarded for completing all the quizzes in this course.

Course Organization and Content

1. Foreword

In this lesson you'll be introduced to some of the Indian groceries. You'll also be provided with two web sites where you can get information and purchase groceries. You'll also be learning to use the Electric Rice Cooker in a different way as compared to the conventional method.

2. Lemon Rice

This is a very easy-to-prepare dish. You'll learn how to modify the plain rice by adding some of the spices and lemon juice to make it really tasty.

3. Dal-Khichdi

Dal-Khichdi is prepared with the basic ingredients Toor dal and Rice. By adding some spices to it, you can make it a tasty delicacy. You'll also learn a variation of it called Moong Dal Khichdi.

4. Peas Pulao

This rice delicacy will cultivate an interest and liking towards eating peas. Blended with aromatic spices, Peas Pulao will really make this delicacy a hit. You'll also learn a variation of this called Vegetable Pulao.

5. Curd Rice

This is a refreshing and light rice delicacy. You'll be using just buttermilk/yogurt and rice along with some spices to make it tasty.

6. Coconut Rice

Using coconut powder and rice combined with spices will yield this mouth-watering rice delicacy.

7. Pongal

The basic ingredients of this delicacy are Split Moong Dal and Rice. These two are combined with spices to make a tasty gravy dish.

8. Bisi Bele Bhath

This is a rice delicacy make with Toor Dal, Rice, Vegetables, and aromatic spices. This is a wholesome gravy dish that can be served as a meal.

9. Peas Rotti

This is a breakfast speciality. Easy to prepare, it is crispy, soft, and tasty. The basic ingredients used are Peas and Rice flour with other taste enhancing ingredients.

10. Rice Flour Pancakes

This breakfast delicacy is made with Rice Flour and other ingredients to add aroma and taste. It is thin, light, and crisp.

11. Masala Dosa

Dosa batter is prepared with the basic ingredients like Urad dal and Rice. Once the batter is ready, you can prepare the Dosa, fill it with Masala, which is prepared using Potatoes, Onions, and other spices. This breakfast delicacy is crisp and folded to eat it like a burger.

12. Ade Dosa

This Dosa is prepared using three different Dals namely: Chana dal, Toor dal, and Urad dal with Rice. With black pepper, red chillies and other spices, this dish is spicy and very filling.

13. Uthappam

This breakfast dish is a fluffy pancake prepared using Urad dal, Rice, Onions, and Green peppers.

14. Idli

This South-Indian breakfast speciality is prepared with Urad dal and Idli Rava. Idlis are fluffy and light to eat.

15. Poha (Regular)

The basic ingredient in this breakfast dish is "Poha". With a combination of spices, Poha (Regular) is very light and tasty.

16. Poha (Gojju)

In this breakfast recipe, "Gojju" is a recipe by itself. You'll be preparing the Gojju with spicy spices and then mix it with the powdered Poha to yield a lip-smacking breakfast delicacy.

17. Garbanzo Beans and Moong Dal Usli

This is a great evening snack made with Garbanzo beans and Moong Dal with a combination of other spices. It's also a great source of fiber.

18. Bele Chutney

This side dish is prepared using Urad dal, Chana dal and other ingredients to add spice and taste. This side dish can be served with Dosa, Idli etc.

19. Carrot Raita and Plain Raita

This is a cool and refreshing side dish prepared with the major ingredient buttermilk/yogurt. This side dish can be served with Lemon Rice, Bisi Bele Bhath, etc.

20. Sajjige

Dessert made with the basic ingredient Rava. With fried cashews, almonds, and raisins, essence and color this is a very tasty dish.

21. Rice Pudding

Great tasting dessert made with Rice, Condensed Milk, and Milk. Topped with fried pista, cashews, and raisins, this dessert is a fine way to end a meal.

22. Carrot Halwa

The basic ingredients for this dessert are Carrots and Condensed Milk. This dessert is soft, cold, and mouth-watering.

23. Vermicelli Kheer

This dessert can be served hot/cold. The basic ingredient for this is Vermicelli and Milk. When cooked, vermicelli is soft and fluffy. With milk and other ingredients, it makes a tasty dessert.
